This combination of earthy mushrooms, sweet onions, and creamy arborio rice is the latest Monday night meal. It’s a three-step recipe, that will taste like it took hours to create.
Step 1
In a medium saucepan, bring chicken broth to a boil. Stir in rice, reduce heat to low and cover; simmer 15 minutes.
Step 2
Meanwhile, heat olive oil in a medium skillet over medium heat. Add garlic; sauté 30 seconds. Stir in onions; sauté 2 minutes, add mushrooms, and continue to cook for 5 minutes or until mushrooms are soft. When rice is ready, remove the lid, increase heat to medium and stir in evaporated milk.
Step 3
Cook for 5 minutes, stirring frequently until rice is thick and creamy. Remove from heat and stir in mushroom mixture and Parmesan cheese. Season with salt and pepper, if desired. Serve immediately.
Monday night just got easier with this creamy mushroom risotto. From roasted butternut squash to goat cheese and golden beet, there’s nothing like a rich risotto to start off the week. Better yet, this recipe is just a three-step process. Leaving you to get on with your weekly to-do list.
Starting with the basics, this recipe takes a few ingredients and turns them into luscious decadence. These include sliced mushrooms, fresh minced garlic, chopped onions, and as much parmesan cheese as your heart desires. As far as most of our risottos go, you’ll need our Carolina® Medium Grain Arborio Rice to achieve that ultra-creamy texture. But, that’s not all. 12 ounces of evaporated milk also helps to create this velvety mushroom delight.
Now the steps. Start with boiling chicken broth and add in the rice. Once you have the rice simmering in the broth, you’ll want to cook it for about 15 minutes before adding anything else. Separately, sauté onions, mushrooms, garlic, and mushrooms in about one tablespoon of olive oil. Meanwhile, add some cream to your rice and stir until creamy.
Once your veggies have softened and are exuding those fragrant aromas we love so much, remove them from the heat and add this combo to your rice mixture. Combined, stir until incorporated and then add in some parmesan cheese. Now you’re ready to dig in!
Note: This delicious recipe can also be made with traditional rice. Cook white rice using the same method as the Arborio Rice, just make sure to adjust the water to rice ratio indicated on the package.
